So I slept crap and decided that I'd just work my butt off all day and then pass out. A mate was to come over who needed come computer assistance, but he fell crook so the evening was mine to sort. So yeah, I spent the day cleaning, baking and cooking.

Every weekend includes one pizza day.
Whether it falls on Fri, Sat or Sun, I pretty much have pizza (my fave food) every weekend.
Tonight's was:
Layered in Spinach
Tomato-Basil Feta
Sliced Grilled Chicken Breast
Portobella Mushroom
Sun Dried Tomato
Thin Sliced Sweet Onion
Crushed Red Peppers

Avgolemono Soup + More:
4 cups Chicken Broth (I had 2 cups vegetable stock and 2 cups turkey stock)
1/2 c long grain rice or orzo
6 egg yolks
1/4 cup fresh lemon juice
1 tsp lemon zest
2 Tsp Parsley
Fresh Ground Pepper
Salt to taste
Added to make heartier"
2 Chicken Breasts cooked/cubed
1/2 Cup Peas
Bring broth to a boil
Add rice or orzo - cook 8-10 min
Mix egg yolks and lemon juice, and lemon zest
Slowly add some of the broth to the egg/lemon mixture whisking as you go to prevent egg curdling/cooking - using about half of the broth
Once that's mixed, pour it all back into the pot whisking as you go to prevent the egg cooking
Cook over low heat until thickened
Add parsley, pepper, salt, chicken and peas.
Stir until warm and thick.
Eat with crusty bread

Light Oatmeal Muffins
3 C Uncooked Oatmeal
3 C Buttermilk
6 Egg Whites
1/2 C Frozen Apple Juice Concentrate- Thawed
1/2 C Omega 3 Oil (Canola, Olive &
2/3 C Brown Sugar
3 C Unbleached Flour
2 t Baking Powder
1 1/2 t Soda
1 t Salt
Combine Oatmeal & Buttermilk - let sit for 1 hour to soften oats.
Mix all the rest in to just moistened.
Grease/Spray muffin tins with non-stick spray or use muffin papers
For regular size muffins bake 20-25 min
For mini-muffins bake 15-18 min
**Hint, use remaining yolks to make the soup above ;-)
Brownies:
Box mix (eggs, oil, water)
Choccy chunks
Mix brownie mix to box specs
Add choccy chunks
Bake to box specs
