So here are the cakes.
Doubled the recipe, and it made one large cake and as you can see, the extra loaf pan too. It took so long for the full cake to bake (1hr 50 min) and for the loaf pan too (40-45min) - such wet batter.
Later, I received a message they postponed the treat day til next week
so I looked online and the cake and frosting can be frozen - yes, I made the frosting too (Cream Cheese of course!), as the cake was baking as it was so late, figuring that I'd frost it in the morning. Let's hope it works as that'd be a lot of cake to waste.
I did have a small slice of the loaf- man it turned out delish - I just pray that the cake is as good, and fully done inside. The picks came out clean - so I'm crossing my fingers it's all good.
This reminds me, today is Kev's 37th.
We don't speak anymore, but I still wish him a Happy Birthday, wish him well, and hope he has a good day whatever he does. Hopefully, in this next year, things will change for the better for him.
I hope his family and friends send/surround him with lots of love today.
